An Earl Grey Old Fashioned is an elevated version of the classic cocktail, with the rich and warm flavor of tea-infused bourbon. It’s just the comforting drink you need to unwind with at the end of a long day. I took that classic cocktail that I love, and elevated it with tea-infused bourbon.

So, while it’s been gloomy, and a little bit of a damper over here lately, at least I can turn to the food and drinks I love for a little comforting bliss. Here's how...

Apricots Poached In Chamomile Tea With Vanilla

We're loving this Apricots Poached In Chamomile Tea With Vanilla recipe we've found by Drizzle and Dip! You can use Tea Vibes' very own Chill Vibes™ chamomile tea blend - infused with honey, vanilla, and bee pollen to create this delectable dessert. It'll be sure to transport you to a porch in the South on a cool Spring night.

Recipe | super easy | 20 mins

  • 2 cups of strongly brewed Chill Vibes™ chamomile tea by Tea Vibes
  • 3/4 of a cup of sugar
  • 1 vanilla pod split and seeds removed
  • 750 – 800g halved apricots with pips removed

Bring the tea, sugar and split vanilla pod to a boil and allow to simmer for about 5 minutes then add the fruit. Apricots (especially very ripe ones) poach very quickly, so you will need to cook them for a maximum of about 3 – 5 minutes. Remove the apricots with a slotted spoon and set aside. If you leave them in the boiling syrup they will turn to mush. Allow the syrup to cool and serve either warm or cold with ice cream.
